All you need are some incredibly simple, pantry-staple ingredients to make this delicious vermicelli bowl recipe at home.

For the Vermicelli Noodle Bowl:
- Vermicelli: We will be needing rice vermicelli to make this dish. It will provide a soft and chewy texture to the noodle bowl.
- Carrot: We will also need a carrot which will add a crunch and a hint of sweetness to the noodle bowl.
- Cucumber: We will need cucumber as well. It will bring a refreshing and crisp element to the noodle bowl.
- Lettuce: We will also need some lettuce leaves. They will provide a fresh and leafy base for the noodle bowl. I like to use the leafy green lettuce over the iceberg lettuce because it has more flavor and more nutrients, and it makes for a less watery vermicelli bowl.
- Bean sprouts: We will need some bean sprouts as well. They will give a refreshing and crunchy texture to the noodle bowl.
- Thai Basil: This will give an amazing fragrant and aromatic taste to the noodle bowl.Try to use Thai basil for this if you can, it has a stronger flavor. If you can't find Thai basil, regular green genovese basil will work as well.
- Lime: We will also need some lime wedges to make this dish. Squirt it on before you eat, to give it a zesty and citrusy kick to the noodle bowl. Do not use bottled lime juice for this.
- Pickled Daikon Radish (Optional): We will need pickled daikon radish. It will add a tangy and slightly sweet flavor to the noodle bowl. I have a recipe for some Quick Pickled Daikon Radishes on my blog if you want to make it, but this is an optional ingredient.
For the Grilled Shrimp:
- Shrimp: I like to use large frozen shrimp for this recipe (sized 16-20). Make sure to fully thaw it before you marinate and cook it.
- Toasted Rice Powder: I like to use toasted rice powder to marinate the shrimp. It will give a nutty and smoky flavor to the grilled shrimp. This can be a tricky ingredient to find but usually is available at an Asian grocery store. You can also purchase this online here. If you're feeling adventurous, you can actually make the powder at home! Just toast up some glutinous rice until they are golden brown on a frying pan and grind it up! It's really easy to do and a lot cheaper. I go through the process in a bit more detail in my Lemongrass Meatballs (Larb Style) - 3 Ways.
- Lime: We will need some fresh lime juice to balance out the sweet and saltiness in the marinade. Do not use the bottled lime juice for this.
- Sugar: You’ll also need some sugar. It will help in caramelizing the shrimp and adding a hint of sweetness to balance out the sour and salty flavor.
- Fish sauce: We will need fish sauce (or soy sauce) to make this dish. It will give the shrimp its umami and savory flavor.
- Ginger and Garlic: We will be adding ginger and garlic to give the marinade extra flavor to the grilled shrimp.
For the Nuoc Cham Sauce:
- Fish Sauce: You’ll need some fish sauce again for the nuoc cham sauce. It’ll be the base of our sauce and it will add a salty umami flavor to it.
- Hot Water: To help dissolve the sugar, I use hot water in the sauce.
- Sugar: You’ll need some sugar as well, which will add a touch of sweetness to the sauce to balance out the tangy and salty flavors.
- Limes: We’ll also need some fresh lime juice to make this sauce. It will provide a tangy and citrusy taste that’ll balance out the other ingredients. Do not use bottled lime juice for this.
- Garlic: We will need 1 garlic clove for this sauce. It will give the sauce a fragrant and garlicky flavor.
For the Hoisin Sauce (An Optional Alternative):
- Hoisin Sauce: We will need hoisin sauce to make this alternative sauce. It will add a sweet and savory flavor to the sauce.
- Toasted Sesame Oil: Using toasted sesame oil for this sauce gives it a nutty flavor.
- Chili Oil: We will also need Chinese chili oil to make this alternative sauce. It will add garlic and onion flavor to this sauce.
- Water: You will need water to thin out the sauce so that it is not too strong, and so that it can easily drizzle and mix with the noodles and vegetables.
For the Garnishes (Optional):
- Crispy Fried Onions: Adding crispy fried onions (store-bought) adds a wonderful onion flavor and adds a crunchy element to the bowl as well.
- Sriracha Chili Sauce: To make this a spicy noodle bowl, I like to drizzle sriracha on top.
- Thai Basil or Mint: I love to add Thai basil or mint to this bowl because it gives it a wonderful fresh aromatic flavor.
How to Make Vermicelli Bowl (Step by Step)
Making this incredible vermicelli bowl recipe at home is super easy and will give you great results every single time. Here's how to make it step by step:
Step 1: Soak the Vermicelli Noodles in Boiling Water
To make the vermicelli noodle bowl, I like to use my soak method from 'How to Cook Vermicelli Without Boiling' by adding the dry vermicelli noodles to a heatproof bowl. Pour boiling water over the noodles, making sure they are fully submerged.
Let the noodles soak for about 1-2 minutes. Do a taste test, to test for doneness around the 1 minute mark.
Strain the noodles through a sieve or strainer and portion a bundle into a serving bowl.
Step 2: Prepare the Vegetables
For the vermicelli bowl, cut the carrots, cucumbers, pickled daikon (optional) into slivers and put it in a bowl with bean sprouts and vermicelli noodles. (Note: I like to remove the cucumber seeds and snack on them with the pups while I cutting up the cucumbers, this is optional, but I find removing the seeds makes for a better texture in noodle bowls)
Next, finely chop green leaf lettuce and add it to the bowl as well. Lastly, finely chop green onions and cut limes into wedges, setting them aside in the bowl after assembling the noodle bowl.
Step 3: Grilled the Shrimp for Vermicelli Bowl
To make the grilled shrimp, start by marinating the shrimp in a small bowl. Allow the shrimp to marinate for 10-15 minutes. After marinating, remove the ginger and garlic from the shrimp to prevent burning on the grill and skewer the shrimp.
Preheat the grill to high heat. Once the grill is hot, grill the shrimp for 2-3 minutes per side until they are cooked through and slightly charred.
Step 4: Make the Sauce and Assemble the Noodle Bowl
For the sauce I usually go with the traditional Nuoc Cham which is a tangy Vietnamese fish sauce dressing that is slightly sweet. If I am feeling like a really saucy meal, I will occasionally also make my easy 3 ingredient Hoisin Dipping Sauce as well which is sweeter and thicker. I like to drizzle that along side the nuoc cham.
Both dressings are good, depending on your mood, you can make one or both!
To make the Nuoc Cham Sauce, dissolve the sugar in hot water in a small bowl. Once the sugar has dissolved, add the garlic, lime juice, and fish sauce and mix well. Serve the sauce on the side of the noodle bowl and drizzle it over the noodles before eating.
To make the hoisin sauce, mix hoisin sauce, toasted sesame oil and chili oil with water and mix well. Set it aside for drizzling.
Once the sauces are made, assemble the bowl by adding in the vegetables, and top it with the shrimp. You can also sprinkle some toasted sesame seeds, crispy fried onions (store bought), fresh basil and mint as well but it's optional.
Drizzle the sauces on top of the bowl and your delicious Vermicelli Bowl is ready to be served!
Joyce's Tips For Making the Best Vermicelli Bowl Every Single Time
- Assembling the Bowl: Start by placing a bed of vermicelli noodles at the bottom of a bowl. Then, arrange the grilled shrimp and vegetables on top. Garnish with fresh herbs and a squeeze of lime for a burst of freshness and top it off with nuoc cham dressing.
- Serving and Enjoying: Serve immediately after assembling to enjoy it at its best. Mix everything together before taking a bite to guarantee that all the flavors are well combined.
- If You Can't Find Toasted Rice Powder - You can make it at home by taking glutinous sticky rice (sweet rice) and lightly toasting it in a frying pan until it is brown. Then blitz it in a blender or food processor.

- Top the vermicelli bowl with fresh herbs such as cilantro, mint, and Thai basil for an added burst of flavor and freshness. The herbs will compliment the other ingredients in the bowl and add a vibrant touch to the dish.
- Serve the vermicelli bowl with a side of nuoc cham dipping sauce for a tangy and slightly sweet flavor. I’ve included the recipe in this post and it pairs perfectly with the vermicelli and toppings. Alternatively, I also like to drizzle it with my hoisin dipping sauce or easy satay peanut sauce to give it additional sweet and savory flavor.
- You can add a few crispy spring rolls into the bowls as well for some delicious contrast in flavors and textures.
- Include crunchy vegetables like sliced cucumbers, bean sprouts, and shredded carrots in the vermicelli bowl for added texture and freshness. You can also add different types of fruits and vegetables like sweet bell peppers, mango or zucchini to switch up the flavors. You can also add additional sweet and spicy flavor to your cucumbers by making them into a Korean cucumber salad before adding it to the noodle bowl.

The leftovers can be stored in the fridge for up to four days. When ready to eat the leftovers, you can simply take the container out of the fridge and enjoy it cold.
Unfortunately, vermicelli bowl leftovers cannot be frozen. This is because the texture and freshness of the ingredients, such as the noodles and vegetables, may become compromised when frozen and thawed.
Plus, the sauce and dressing may separate or change in consistency when frozen. Therefore, it is best to consume the leftovers within the recommended timeframe for optimal taste and texture.

- If you can't find Roasted Rice Powder, you can make this at home by taking glutinous/sticky rice and lightly toasting it over the frying pan until brown, then grind it up into a powder.
Ingredients
- ½ package thin rice vermicelli (approx. 200g)
Vegetables
- 1 carrot (cut into thin matchsticks)
- ½ cucumber (sliced, or cut into matchsticks)
- 3-4 lettuce leaves (cut finely into thin ribbons)
- 1 cup bean sprouts
- lime wedges
- 1 stalk green onion (finely chopped)
- 2 sprigs fresh Thai basil
- 1 cup pickled daikon radish (Optional)
Grilled Shrimp
- 12 large shrimp (sized 16/20, fully thawed if using frozen)
- 1 tablespoon toasted rice powder
- 1 lime (juiced)
- 1 teaspoon sugar
- 3 slices ginger (roughly chopped)
- 1 clove garlic (roughly chopped)
- ½ tablespoon + 1 teaspoon fish sauce (or soy sauce)
Nuoc Cham Sauce (Full Recipe Post Here)
- 6 tablespoons hot water
- 2 tablespoons + 1 teaspoon sugar
- 1 clove garlic (finely minced)
- 2 tablespoon fish sauce
- 2 tablespoons fresh lime juice (approximately 1 lime, or substitute with white vinegar)
- 1 birdseye chilli (finely minced, optional)
Hoisin Drizzle Sauce (Optional, In Addition to Nuoc Cham - Full Recipe Post Here)
- 3 tablespoons hoisin sauce
- 2 teaspoons toasted sesame oil
- 2 teaspoons chili oil
- 6 tablespoons water
Toppings & Extra Bits (Optional)
- crispy fried onions
- Sriracha chili sauce (to make it spicy)
Instructions
Prepare the Vermicelli Noodles
In a heat proof bowl, add the dry vermicelli to it and pour boiling water into it. (Make sure you cover all the noodles with the water.)
Soak it for the amount of time the packaging tells you. For us it was approximately 1-2 minutes.
Check its readiness by taste-testing it. If it's still hard and raw, soak it for an additional minute.
Once it's done, strain it and portion a bundle into the serving bowls.
Prepare the Vegetables
Soak the bean sprouts in a bowl of cold water for a few seconds and drain it. Repeat this a few times until the water runs clear. Pick out any brown or mushy bean sprouts and discard them.
Add them to the serving bowl with the noodles.
Cut the carrots, cucumbers, pickled daikon into thin matchsticks and put them in a bowl with the vermicelli noodles.
Finely chop the green leaf lettuce and add that into the bowl as well.
Finely chop the green onions, and cut the limes up into wedges and set aside inside the bowl after the noodle bowl has been assembled.
Finely mince 1 clove garlic and set it aside for later. We will be using this for the nuoc cham dressing.
Roughly chop 3 slices ginger and 1 clove garlic and set this aside for the shrimp marinade.
Marinate and Grill the Shrimp
In a small bowl, combine the shrimp with 1 tablespoon toasted rice powder, 1 teaspoon sugar, 3 slices ginger (roughly chopped), 1 clove garlic (roughly chopped), ½ tablespoon + 1 teaspoon fish sauce.
Marinate it for 10-15 minutes
Once the shrimp has marinated for 10-15 minutes, remove the ginger and the garlic from the shrimp so they don't burn on the grill. Skewer the shrimp.
Set the grill to high heat, and when it has come to temperature, grill the shrimp for 2-3 minutes per side.
Once the shrimp is done, add it to the bowl with the noodles and vegetables.
Make the Nuoc Cham Sauce
In a small bowl, dissolve 2 tablespoons + 1 teaspoon sugar with 6 tablespoons hot water.
Once the sugar has dissolved, mix in 2 tablespoon fish sauce, 2 tablespoons fresh lime juice, minced garlic, and 1 birdseye chilli (optional)
Serve on the side of the noodle bowl and drizzle it on right before serving.
Make the Hoisin Drizzle Sauce (Optional, In Addition to Nuoc Cham)
In a small bowl, combine 3 tablespoons hoisin sauce, 2 teaspoons chili oil, 2 teaspoons toasted sesame oil and 6 tablespoons water and mix well.
Serve on the side of the noodle bowl and drizzle it on right before serving.
